What about some ice cream with homemade cones to beat the heat today? 🥵🍦

Cream cheese ice cream with raspberry swirl and homemade cones

ingredients:
for the cones (about 8 cones):
90 g butter
100 g butter
1 egg
175 g flour
125 ml cold water
1 tbsp. vanilla extract or vanilla sugar

for the ice cream:
200g cream cheese
200 g sour creme
200 g creme fraîche
100 ml heavy cream
100 ml whole fat milk
130 g white sugar
6-8 tbsp. lemon juice
pinch of salt
1 tbsp. vanilla extract or vanilla sugar

for the raspberry swirl:
180 g rasberries
40 g white sugar

Directions:

1. For the cones: Melt the butter. In a bowl cream together all other ingredients (flour, egg, cold water, vanilla extract) and add the butter. Put at room temperature for at least 3 hours (better overnight).
2. Place a nonstick skillet, cast iron pan or frying pan on low heat and brush the pan lightly with a flavorless oil. Pour 1 tablespoon of batter into the center of the pan. Bake until the waffle ist light brown. Remove from heat and immeadiately fold into the shape of your preference. Place on a wire rack to cool completely.
Note: For the typical cone shape quickly start at one edge and roll the waffle into a cone shape. Squeeze the tip of the cone to seal it so the ice cream won't drip out.
3. For the ice cream: Mix together the cream cheese, sour creme, creme fraîche, heavy cream and milk. Add sugar, salt, vanilla extract. At last squeeze one lemon and add the lemon juice. Put mixture into an ice cream maker and blend for 20-30 minutes. If you don’t have an ice cream maker just pour mixture into a large plastic box and freeze for 20 minutes.
4. Prepare raspberry swirl by blending the raspberries and combine with sugar. For an extra smooth swirl strain raspberries through a sieve.
With a fork add the rasberry mixture to the cream cheese ice cream and then freeze in completely in a large plastic box for at least 5 hours.
5. Fill cones with lots of ice cream and enjoy!

From garden to Brownie 🍓🍫 Freshly picked strawberries, mascarpone and chocolatey Brownie are a perfect match! Enjoy 😋

Ingredients:
for the brownies
300 g good quality dark chocolate
2 eggs
50 g butter
1 tbsp. vanilla extract
80 g sugar
65 g flour
0,5 tbsp. baking soda
pinch of salt

for the filling:
125 g mascarpone
100 g yoghurt
125 g cottage cheese
125 g heavy cream
3 tbsp Muscovado sugar of brown sugar
1 tbsp. vanilla extract
650 g strawberries

Instructions:
1. In a bowl placed over a saucepan of simmering water melt the chocolate and butter. Remove from heat and let it cool completely (otherwise your brownies will turn out hard and dry!).
2. Preheat oven to 170°C. Line a pan with parchment paper. In a bowl cream together the eggs, sugar and vanilla extract. Mix in the melted chocolate mixture.
3. In another bowl whisk together the flour, baking soda and salt and slowly add to the chocolate-egg mixture with a wooden spoon.
4. Pour into the prepared pan and bake for about 20 minutes. Remove from oven and let cool completely.
5. For the filling: Mix together Mascarpone, yoghurt, cottage cheese, sugar and vanilla extract. Beat the heavy cream until stiff and add to the filling.
With a cookie cutter cut out any shapes you like of the brownie. Then put some filling on your piece of brownie and place another piece on top. Add more filling and decorate with strawberries.
