[Nutty delight] Nut triangles
Just one more week until Chistmas Eve will be there! Whenever you are still desperately looking for the last christmas presents or asking yourself if you will be in time with the whole christmas decoration; there should always be time for some christmas cookies (or nut triangles in circle form;)!
The last years I showed you all of my favourite festive treats, like Vanillekipferl and Schmalzkuchen and even fancy cakes like the chocolate hazelnut cake with Giotto frosting and Bellini cake were part of my christmas world and by the way perfect cakes for New Years Eve as well!
Today I am showing you a treat which is not a typical christmas cookie for me, but because of the big portion of nuts I am always associate these sweeties with christmas. The nut triangles are equally crispy and gooey because of the thick nut layer and crispy sugar cookie bottom. All in all they are very rich and intense in taste and the dark chocolate is the perfect complement to the caramelized nut filling.

For the dough:
- 300 g flour
- 1 tbsp. Baking powder
- 130 g white sugar
- 2 eggs
- 130 g butter
For the filling:
- 200 g butter
- 5 tbsp rum (or water)
- 200 g brown sugar
- 1 tbsp. Vanilla sugar
- 400 g nuts (e.g. hazelnuts, almonds etc.)
For the decoration:
- 200 g dark chocolate
Prepare two baking sheets by layering with baking paper. Preheat oven to 175°C.
For the dough: Mix together the flour, baking powder and white sugar. Add the butter and at last the two eggs. Roll out the dough at the same size like the baking sheets.
Fort he Filling: Melt marmelade, butter, brown sugar, rum and vanilla sugar. In the end mix in the nuts. Now pour the filling onto the prepared dough.
Bake for about 30-35 minutes and remove from oven and cut cookies in any shape you like! It can be the classic triangles or circles.
For the decoration: Melt dark chocolate and decorate the cookies by dipping them into the chocolate liquid.
